TUESDAY February 5 is Shrove Tuesday so get cracking with these great pancake recipes.
Perfect Pancakes Serves 1-2
Two Goldenlay Omega 3 eggs 120g plain flour 210ml milk One tablespoon melted butter or sunflower oil Oil for cooking
Sift the flour into a large mixing bowl, add the salt and give it a mix before making a well in the middle.
Break two eggs in the well and pour in roughly a quarter of the milk. Gently whisk everything together and slowly add the rest of the milk until it's all used up and the mixture is smooth.
Put a small amount of oil in the bottom of a frying pan - just enough to coat the base - and heat it.
Put a small amount of the mixture in the pan - enough to cover the base and allow it to cook for roughly a minute.
Shake the pan to make sure the pancake slides and hasn't stuck and, if you're brave, toss the pancake over and allow the other side to cook for around another minute.
Serve straight away with a squeeze of lemon juice and a sprinkling of sugar.
Pancakes with Strawberries and Champagne sauce
Make the pancakes then stack them on a plate with greaseproof paper between.
Slice about a dozen strawberries and pop them under the grill until just beginning to caramelise. Place two large egg yolks, two tablespoons sugar and a glassful of champagne in a metal bowl and whisk until the sauce is thick and doubled in volume.
Scatter a few slices of strawberry on the pancake, smother with champagne sauce, fold over, sprinkle with a little lemon juice and indulge!
Pancake Fruit Layers
Make the pancakes as above then turn the pancakes over and allow them to cook for around another minute. Sandwich the fruit and cream between them and sprinkle with a little sugar.
