The owner of a chain of cafes has defended his company’s hygiene standards after a branch was given the lowest possible hygeine rating.

Igor Bekaert owns Belgique in High road, Loughton, and which was rated zero out of five by the Food Standards Agency.

Further details of problems found at the cafe have so far not been revealed, but Mr Bekaert said a manager had been sacked for gross misconduct following the inspection.

The two other Belgique cafes, in Epping and Theydon Bois, are both rated five out of five.

Mr Bekaert said: “We have all the correct procedures and paperwork in place but it was a case of a manager not following instructions.

“As long as we are dealing with humans there will be mistakes.

"We are complying with all the improvement requests."

Mr Bekaert said the previous manager found it difficult to cope as she was caring for her mother who was suffering from terminal cancer.

The cafe was last inspected on April 14 and is due to be re-inspected on Monday.

The Guardian is awaiting further details from the  Environmental Health department at Epping Forest District Council.

The buck should stop with the owner and instead of blaming his staff (what does he pay them one wonders?) he should ensure that all aspects of hygiene are covered by someone in the event of a dedicated person being ill or like this unfortunate staff member, having a relative who is ill. I have been in a couple of these restarants and was not that impressed as the staff appeared really laid back and service was atrocious. This business has always been in the paper mainly for negative things like his battle with his extension and now this.

I sat in the Epping BELGIQUE , and saw a waitress sneeze INTO her hand, and then pick up cutlery to bring to a table....
I went straight over, and asked her to put it Into the dishwasher, and go wash her hands,....
She was highly offended, and denied what I just saw!

Another waitress, just told her to oblige.....
Where is the basic training of hygiene .... Even at home.... I would sneeze into my elbow ...NOT my hand......

So you're trying to tell us that you had no idea how bad things were? I find it incredible you blame the manager, didn't you ever visit the place? didn't another member of staff bring it to your attention?

Standards are in place for a good reason and its YOUR responsibility to make sure they are met and there's no point in pointing your finger elsewhere. You own the joint so its YOUR responsibility to look after it and the health of your customers.

I have sat in your Woodford shop and watched your staff moving the cakes from one area to another without gloves on and then taking money. I have NEVER been back since.
, So Mr Bekaerf I think you need to keep a close eye on YOUR shops. You are responsible for them and if your managers and manageresses were trained the correct way then there perhaps would not be these failures..
