Police were called to the scene on the A414 in High Ongar following reports of the collision, involving a Matchless motorbike and a Mercedes C180 at 3pm.
The 62-year-old biker was taken by air ambulance to the Royal London Hospital in Whitechapel for further care where he remains.
His pillion passenger, a 60-year-old woman, was taken to Broomfield Hospital in Chelmsford with minor injuries.
Police say that the couple are from Lincolnshire.
