It’s all about fresh, seasonal, flavoursome ingredients that create simple, yet distinct flavours. Food that for centuries fed farmers, sailors and highlanders... Unique vegetables, Mediterranean catch and the unforgettable taggiasca olives are just a handful of the wonderful ingredients that will feature in this three-course menu. Darkhorse - Travel to the Basque Country

Darkhorse is a modern European restaurant and cocktail bar - with Spanish influenced food and drink wrapped in a British attitude. Dedicated to just one area of Spain, the Basque Country, this Supper Club has a four-course set menu which encompasses the northern coastal roads from San Sebastian to Bilbao through to small fishing villages like Getaria. Basque cuisine is wide-ranging and innovative, based on ingredients sourced from the Cantabrian sea, local gardens and farms. If any one feature stands out in the gastronomy, it’s the use of seasonal, top quality produce - cooked well, with little fuss. This menu reflects some of those great ingredients and some of the chefs’ favourite dishes eaten whilst travelling around the region.

Mains include hake with fine herbs, Txakoli and clams or char-grilled lamb neck with Basque spices and black pudding
