Yes, we’ve all been to Thai restaurants, the streets are awash with them, but there’s only one Giggling Squid...or 29 of them to be exact, and it all started as a home industry based on a husband and wife’s idea of bringing authentic cuisine to our tables.

Managing director Andy and wife Pranee Laurilland began what has become their collection of delicacies based on Pranee’s extensive knowledge of her home country cooking in Brighton in 2002.

It’s still there in The Lanes, but what they didn’t imagine was the incredibly fast growth that would overtake their venture.

Giggling Squids now occupy our food corridors in towns including Windsor, Henley, Marlow, Beaconsfield and Wokingham.

I ate at the Windsor restaurant next door to the Theatre Royal at the bottom of Thames Street.

The sharing platter for two - strips of hand-cut pork grilled on skewers, salt and pepper squid, Thai chicken wings and vegetable spring rolls (£16.75) - were delicate and complemented each other. It was a great way to start what turned out to be a meal that was sumptuous.

The watermelon salad with pork floss (£5.95) is a delight with pork floss (bit like cotton candy but made from dried, shredded pork), lime juice, fried shallot and a pinch of leafy herbs.

It was light yet immensely satisfying as was the black pepper soft shell crab (£7.50 - my favourite). This can be easily ruined if not done with care, becoming chewy and difficult to eat.

The crab is fried with with garlic, black pepper and coriander until it has that bite.

However, for me the delicately fried Pak Maew green leaves aligned with rich, red curry peanut sauce is sensational (£9.95). One of the couple’s chefs found the leaf in a market in Thailand.

When you think of the king of curries look no further than the lamb shank Massaman (£16.50).

Cooked long and slow, it falls from the bone and melts in your mouth as this warmly mild sensation oozes unctuous juices. The curry uses coconut milk, sweet spices, cinnamon, nutmeg and star anise to produce a deeply satisfying taste.

The tropical jungle curry (Keang Pa) I had as a king prawn dish (£11.50). There’s no coconut milk here, but it is very herby and fragrant.

Add coconut rice and tenderstem broccoli and Pak Choi and the meal is complete.

This is fantastic food and reasonable prices that gives the diner so much experience of great Thai cuisine.
